Paleo Chinese Meatballs






Ingredients

1/2 lb ground pork ( or mix of any ground meat )
1 clove garlic, coursely chopped
salt and pepper to taste
1 egg optional
1 dash of coconut aminos optional

You can add a variety of herbs and veggies like cilantro, parsley, onions and celery.

Instructions

  • Put ground meat, garlic and or other fresh herbs in a food processor. 
  • Add splash of water and process into a smooth paste. If you are adding an egg, you can omit water.
  • Bring a pot of water to boil. 
  • Wet a teaspoon and spoon meatballs into shape. 
  • Drop into boiling water. 
  • I give it 5 minutes and the meatballs usually will float when they are cooked. 
  • Serve in bone broth with zuoodles or other leafy greens.
These boiled meatballs are one of my comfort food as a child. they are usually served in congee ( rice broth) but I find that in a Paleo diet, they are just as good in bone broth and some Chinese greens like choy sum or bok choy.
